Lemon Butter Tilapia


Ingredients:

4 tilapia fillets (160 to 200 grams each)

1 tablespoons finely chopped fresh parsley

1/2 teaspoon ground paprika

1/2 teaspoon crushed red pepper

4 tablespoons butter, divided

2 tablespoons extra virgin olive oil

2 large garlic cloves, finely chopped

Fine sea salt and freshly ground black pepper to taste

1 lemon, peel grated, and rest of the lemon quartered or sliced

Fresh parsley for garnish, optional


Instructions:
  • Preheat oven to 375º F (190º C).
  • In a small bowl, combine parsley, paprika and red pepper. Set aside.
  • Melt 2 tablespoons butter in a small pan over medium heat. Add garlic and olive oil, then remove from heat.
  • Butter the bottom of a shallow baking dish with 2 tablespoons melted butter.
  • Lightly season tilapia with sea salt and ground black peper and place on baking dish. Baste tilapia with half of the butter/garlic/olive oil mixture and sprinkle with half parsley mixture.
  • Bake fish in preheated oven for about 8 minutes. Remove from oven and baste the tilapia with the remaining butter/garlic/olive oil mixture and sprinkle with half parsley mixture. Return to oven and bake for 6 to 8 minutes or until fish flakes easily with a fork.

To serve:

Place baked tilapia on a serving dish, squize lemon juice over the tilapia and garnish with grated lemon peel.

Serve with potatoes, salad or steamed vegetables, optional.

Garnish with fresh parsley, optional.

Makes 4 servings.


Note: If you are using frozen tilapia, thaw it in the refrigerator, overnight or for 8 hours.
